Moffat E32D5/P8M Description

The Moffat E32D5/P8M Turbofan convection oven with proofing cabinet is constructed of rust-resistant stainless steel and can hold five full-size trays on five wire racks in its porcelain-enameled interior. With this finish, the cavity is slick to prevent food and bacteria from building up. The doors of the oven and holding cabinet are made of stainless steel and glass panels for interior visibility. Continuous door seals on both of the doors prevent ambient air from seeping inside. The proofing cabinet can accommodate eight full-size trays of product.

Electronic controls use a digital time and temperature display that features manual or program modes. The Moffat E32D5/P8M convection oven is equipped with 20 programs with three cooking stages, and five-level moisture injection modes ensure food stays moist. A two-speed, reversing fan system pushes hot air throughout the cavity. The proofing cabinet has a mechanical thermostat to monitor the temperature and a low-velocity fan system circulates air throughout the cabinet.
